Notes

The two-cup version of Dara's recipe, on an Orea Wave filter. The lower temperature and broader pour spacing soften acidity and push sweetness. Keep the pours calm; turbulence shows up quickly on the open-bottom O2. Pour when the water level has nearly reached the coffee bed rather than chasing the timestamp. If the drawdown races and the cup feels thin, grind a touch finer. If it tastes heavy or muddy, grind coarser or pour with a narrower center finish.
