Inspired by CAFEC's Deep 45 kissaten approach, this Flower Oval 102 recipe uses a concentrated brew and very slow continuous flow. It evokes Japanese coffeehouse service with a syrupy, low-acid cup suited to sipping or adding milk.

Notes

Dark coffee is essential: lighter roasts can taste undeveloped at 80°C. Hold the continuous stream near 1g/s so the bed never cools between pulses. Preheat thoroughly, and serve with milk if you want to soften the concentration.
