Method

  1. Pour 1 / 4

    Pour 300g gently.

    +300g→ 300g Fill gently 20°C
  2. Prepare 2 / 4

    Crack the valve to a slow, steady drip.

  3. Steep 3 / 4

    Let it steep undisturbed.

    Valve: drip 3h–4h
  4. Done 4 / 4

    Concentrate ready. Dilute to taste, or serve over ice.

Notes

The valve position is the whole game: dial it to a steady, even drip and use the Bluetooth scale to confirm the rate holds over the long steep. Top the chamber with ice to hold the temperature down as it runs.
