The Second Part Changes Scale
手沖咖啡大全2:完美萃取 is the second installment of a project by 醜小鴨咖啡師訓練中心, Taiwan’s Ugly Duckling barista training center. The subtitle, Perfect Extraction, announces a strong promise. The contents and presentation from Taiwan Tohan, however, reveal an approach less absolute than the claim suggests: comparing dripper structures, observing how extraction changes within the bed, adjusting the roast, and answering questions arising from practice.
The promotion situates this volume after 手沖咖啡大全, which focused on extraction concepts and basic techniques. The sequel seeks to explore the “subtle changes” during pouring and answer readers’ questions. Books.com.tw reproduces the contents and confirms four chapters plus an appendix. The real scope can therefore be verified without relying only on commercial adjectives.
The result is not an exhaustive encyclopedia. In 136 pages, it connects three scales: tool design, movement of water, and development of the bean in the roaster. That connection is its distinctive feature and also requires caution. An observation repeated by trainers can be a highly useful hypothesis before it becomes a demonstrated mechanism.
Two Geometries, Two Ways of Thinking About Flow
The first chapter sets conical and fan-shaped drippers against each other. For cones, the contents verify Hario V60, Kono, and Tiamo; for the fan shape, Melitta and Kalita. Each family is described through features such as filter area, base shape, number of holes, ribs, and the relationship between dripper and paper. The handbook does not merely list brands: it attempts to derive consequences from these components.
Geometry can indeed alter internal distribution. A mathematical and experimental model published in PLOS ONE compared cylindrical and truncated conical beds. The cone developed more pronounced spatial variations in velocity and extraction, even though the total outlet concentration could be similar. This supports the chapter’s central question: two drippers are not equivalent simply because they receive the same mass of water.
It does not, however, demonstrate that every V60 always produces a particular profile or that a fan shape is intrinsically more uniform. The filter, particle distribution, depth, dose, pour, and outlet also change. The book is most useful when its descriptions of ribs and holes are used to design controlled comparisons.
Favorable and Unfavorable Solubles, and Extraction by Phases
The second chapter introduces a division between “good” and “bad” components, addresses the relationship between particles and flow, and proposes thinking in three extraction phases. It also asks what happens when the grind is uneven and how ground coffee can be combined. This is a vocabulary oriented toward bar decisions.
The dichotomy between good and bad substances should be read as sensory shorthand, not as a universal chemical classification. Acidity, bitterness, and astringency depend on concentration, matrix, serving temperature, and preference. A molecule does not change moral identity because it appears earlier or later in the process. It does make sense that different compounds extract at different rates and that a broad particle distribution creates simultaneous paths.
Nor is the relationship between grinding and flow linear. Small particles contribute surface area and may migrate or block pores; large particles leave spaces and have centers that take longer to exhaust. The idea of three phases can help readers observe the cup over the course of a pour, provided it is not turned into an exact boundary applicable to every coffee.
The book also presents “selective extraction,” different pouring methods, and staged flavor extraction. The experimental value lies in separating fractions, tasting them, and recombining them. The limitation is that a temporal fraction simultaneously captures changes in concentration, temperature, composition, and bed condition. Attributing its flavor to a single cause requires additional measurement.
When Extraction Meets Roasting
The third chapter takes the question to the roaster. The contents include four basic variables, heat-transfer dynamics, roasting techniques, the composition of a curve, and adjustments for lengthening or shortening phases. They then address acidity, sweetness, bitterness, and aromatic notes, and propose seeking points of balance for different beans.
This expansion avoids a common error: asking the recipe to solve everything. Roasting transforms precursors, porosity, moisture, brittleness, and solubility. A study of chemical and sensory evolution during roasting tracked volatile compounds and attributes across different times and found progressive changes, not one single jump between light and dark. Its laboratory conditions do not necessarily reproduce the handbook’s curves, but they support the importance of phase and development.
More recent research on roast profiles and arabica quality also found effects of time and temperature on physicochemical and sensory properties. Like every experimental design, it studies particular coffees and equipment. It neither validates one universal curve nor permits flavor to be inferred from external color alone.
The book’s editorial contribution is to connect curve and recipe. If a coffee is consistently harsh or hollow, a barista can review both extraction and roast. The danger is adjusting both simultaneously and losing traceability. More rigorous practice keeps one stable while changing the other.
“Remote Control” of Extraction
The fourth chapter uses a striking expression: controlling extraction remotely from the roast. The contents verify examples with coffees from Sumatra, Hawai‘i Kona, and Yirgacheffe, and a section on “the roaster’s thinking.” The metaphor expresses how prior thermal decisions change the bean’s later response to water.
There is no literal remote control. The roaster modifies properties that condition extraction; the barista still depends on water, grinding, ratio, temperature, turbulence, and equipment. Nor do three origins represent all the variability within Sumatra, Kona, or Yirgacheffe. Process, harvest, variety, and storage can be as important as the geographical name.
This part is especially useful for teams that roast and brew their own coffee. It supports a shared conversation between bar and roaster: not limiting the discussion to “lighter” or “darker,” but recording curve, mass loss, color, practical solubility, and response across methods.
Readers’ Questions and Craft Knowledge
The appendix gathers twenty questions. The contents confirm subjects such as storing beans and water, temperature, dripper shape, rinsing paper, resting after roasting, particle flotation, intermittent extraction, grind uniformity, time, roast degree, and choosing between purified and mineral water.
This format captures real training questions and makes the book easy to consult. It also mixes questions with different levels of evidence. The advantage of a craft answer is that it can guide an immediate test. Its limitation is that a rule born from local equipment or water may not transfer intact.
A comparison of filter methods found chemical and sensory differences among V60, AeroPress, French Press, and Pure Brew under defined recipes. It supports the need to specify the system and conditions. It does not permit every difference to be attributed to the dripper, because filtration, pressure, immersion, and intervention change at the same time.
Reception and Limits
The publisher states that the second volume arose from questions submitted after the first. This is evidence of interaction reported by the project itself, not an independent measure of reception. Sanmin and Books.com.tw show ratings or commercial signals that can vary; they do not suffice to support claims about sales, professional impact, or consensus.
No extensive independent critical review of the title was located. This dossier therefore does not claim that its three-phase extraction or “remote control” was adopted by the industry. Its documentable relevance lies in formulating, in traditional Chinese and with a professional training orientation, connections among dripper, flow, and roast that can be tested.
Edition, Discrepancies, and Access
Taiwan Tohan identifies ISBN 9789863319207, 臺灣東販, 136 pages, and December 28, 2015. Sanmin agrees on the ISBN, publisher, and extent, but records December 26. Gota publishes only 2015-12: choosing either day would conceal an unresolved discrepancy.
Sanmin and Books.com.tw describe a paperback edition. The original catalog title uses a full-width colon; some stores present it with a hyphen or spaces. No commercial English edition has been verified. Complete Hand-Pour Coffee Handbook 2: Perfect Extraction is an editorial translation to orient readers, not evidence of availability. The documented edition is in traditional Chinese, and its subtitle should be understood as a pedagogical horizon, not a guarantee of an objectively perfect cup.
