A sensory question across many scales

Yukihiro Tanbe takes an everyday problem and expands it: if a cup is delicious, where did that quality originate? コーヒーの科学 「おいしさ」はどこで生まれるのか avoids locating it in a single compound or gesture. The 講談社 description announces a scientific analysis of knowledge developed in coffee shops that roast their own beans, supported by research papers and directed toward understanding how to control flavor.

The book belongs to Bluebacks, a Japanese popular-science series. That determines its balance: it presents chemistry, botany, and physiology in greater detail than a domestic manual, but does not adopt the structure or critical apparatus of a specialist monograph. Its 320 pages offer a narrative journey in which history, molecules, and practice illuminate one another.

The subtitle's question also contains a caution. “Delicious” is not a substance hidden inside the bean. The beverage provides stimuli; a person with particular experience and expectations perceives and interprets them. Tanbe can explain the conditions that make flavor possible, not dictate a universal preference.

Eight chapters from the plant to health

The table of contents published by 丸善ジュンク堂 organizes eight chapters. The first asks what coffee is. The second discusses the coffee plant and bean; the third follows its history. The fourth directly addresses “deliciousness,” preparing the transition among object, perception, and evaluation.

The fifth covers the components that produce flavor. The sixth studies the science of roasting and the transformations that turn green coffee into aromatic and soluble material. The seventh examines extraction, where water, grind, temperature, and time select a fraction of what is available. The eighth closes with coffee and health. There are an introduction, conclusion, and references.

That architecture distinguishes the book from a recipe collection. Before asking how to pour, it requires the reader to consider species, fruit structure, the history of consumption, and the formation of compounds. After the cup, it broadens the focus to physiological effects. This breadth helps locate questions, although no chapter can exhaust its discipline.

The Niigata University catalog confirms authorship, publisher, date, language, series, and ISBN. It records 317 pages, while 講談社 counts 320; this is a common difference between bibliographic pagination and commercial extent, not evidence of two different editions.

Translating research into practical decisions

Tanbe is a scientist and popularizer connected to Japanese coffee culture. His achievement lies in preserving mechanisms without losing the questions that make them relevant. Green coffee composition matters because it conditions thermal reactions; roasting matters because it transforms precursors and structure; grinding and water matter because they govern transport and concentration; perception matters because no chromatogram by itself proves that a cup is pleasing.

This chain resists simple explanations. An acidic coffee cannot be understood only by measuring pH, just as an aroma cannot be explained by listing every volatile without considering thresholds and interactions. The book invites readers to connect scales and distinguish chemical quantity, availability in the beverage, and sensory experience.

Its practical approach is not equivalent to providing an independent control for every attribute either. Changing the roast simultaneously alters structure, mass loss, aromatic compounds, and solubility. Changing the grind modifies speed and uniformity, but may introduce opposing effects. “Controlling” flavor means designing comparisons, not guaranteeing a linear relationship.

History and culture within a science book

The presence of a historical chapter prevents the current beverage from being presented as the inevitable result of chemistry. Ways of roasting, brewing, and valuing coffee changed with trade, technology, and social habits. An explanation of flavor is always situated within a repertoire of beverages and expectations.

The historical chapter should nevertheless be read as a supporting synthesis. It does not replace a global history of slavery, colonialism, producer economies, or coffeehouse cultures. Its function in the volume is to show how the scientific object came to assume its current forms.

The Japanese perspective adds value to a catalog often dominated by English-language books. The problems of the kissaten, artisanal roasting, and filter brewing form part of the author's horizon. That does not make every observation specifically Japanese, but it does influence which examples are familiar and which questions deserve explanation.

Roasting and extraction after 2016

The process chapters continue to offer foundations, but later research requires details to be updated. A 2022 review summarizes relationships among roasting conditions, physical and chemical transformations, and sensory quality. Its breadth shows how much the result depends on interactions among origin, processing, moisture, heat transfer, and evaluation criteria.

For the reader, the consequence is methodological. Tanbe's explanations serve to formulate hypotheses; specific values should not be transferred from one machine or coffee to another without measurement. Final color alone does not represent the complete thermal history either. Two coffees that look similar may have followed different profiles.

Something comparable happens in extraction. The general description of diffusion, convection, surface area, and concentration remains useful, but measuring equipment and models have refined the analysis. Responsible practice consists of holding constant what can be held constant, measuring dose and beverage, recording time, and tasting without turning a numerical yield into an automatic synonym for quality.

Genetics and health: two moving frontiers

Coffee botany and genetics have advanced rapidly. A 2024 study of the Coffea arabica genome and populations provides resolution that a work completed in 2016 could not have incorporated. This does not invalidate the introduction to the coffee plant; it dates its limits. For current taxonomy, domestication, or genetic diversity, readers must consult later literature.

Health requires equivalent care. An umbrella review in BMJ found associations that were more often favorable than harmful, but much of the evidence was observational. Association does not prove causality, doses vary, and individual responses depend on clinical conditions. The final chapter provides popular context, not medical advice.

These two cases reveal a virtue of the scientific approach itself: a book can be sound and become partly outdated. Updating it is not refuting its project, but practicing it.

Reception, usefulness, and limits

The 講談社 listing emphasizes the use of scientific papers to examine coffee's mysteries. That promise distinguishes the book within Japanese popular science and explains its appeal for readers who have moved beyond the recipe stage. Nevertheless, “based on studies” does not mean that every claim has the same degree of certainty. A popular synthesis selects, interprets, and simplifies.

The volume is useful for Japanese-reading baristas, roasters in training, educators, and enthusiasts who need a map of disciplines. It can point toward more specific questions: whether the problem belongs to botany, roasting chemistry, transfer during extraction, perception, or epidemiology.

It is not a professional tasting protocol or a systematic review. Its references should begin a search, especially in fields updated since 2016. Nor does it cover political economy, sustainability, or working conditions in depth, although those aspects are essential to understanding coffee as a complete system.

How to preserve its best lesson

The most fruitful way to read it is to follow a variable through several chapters. For example, observe how a varietal characteristic is modified during processing and roasting, what portion reaches the beverage, and how it is perceived. This exercise prevents origin from being confused with destiny and chemistry with preference.

It is also helpful to note the date of each fact, compare it with recent reviews, and separate three levels: demonstrated mechanism, plausible explanation, and practical recommendation. The book gains when the reader does not treat it as the final authority, but as a model of disciplined curiosity.

Its answer to “where does deliciousness come from?” is ultimately distributed. It begins in a plant and a chain of transformations, but also in a brewing method and a person who perceives. That refusal to offer a single cause keeps the work's core relevant even where the information needs updating.
