ROK W1 Misc pourover by Alternative Brewing

Alternative Brewing's run at the method ROK suggests for the W1, with the numbers ROK never publishes: a clean 1:16, water measured at 95°C, and a bloom judged by where the water sits rather than by weight. Two pours is the whole recipe — the W shape is what keeps the bed even, so there is nothing to gain from splitting it further.

Before you brew

  1. 1 Push the tip of the paper filter inwards over the central peak, then press it down with the ring until it sits in a W.
  2. 2 Rinse the filter.
  3. 3 Add 15g of grounds.

Notes

Rinse the paper after the ring seats it and throw the rinse water out; it warms the glass and pulls the paper taste. Shake the grounds level around the central peak before the first pour so the ring starts at one depth. The first pour is given by level, not by grams: fill slowly until the water sits just above the middle cone, which lands around 120g here. If the brewer threatens to overflow on the second pour, wait for it to fall back before adding the rest. The bed should finish flat. Alternative Brewing's own summary is that the two-pour is the point of the thing — other techniques work on the W1, the 4:6 among them, but none of them are what it was built for.
