    Closed valve, dry filter. Pour to 60g. Light WWDT.

    +60g→ 60g Fill gently Valve: Closed

    Open valve and drain the bloom into the carafe.

    Close valve. Pour to 150g. Swirl and set the Mini aside. Pour the drained bloom (about 22g) into a separate cup, then replace the Mini over the carafe.

    Slowly open the valve fully. Pulse pour to 265g.

    Drawdown complete around 3:45–4:00. Add part of the reserved bloom back to taste.

Notes

Works well with funky or fermented coffees. Brings out more sweet fruit flavours. Nominal 1:16 including the separated bloom; the through-bed pour is about 1:15. Optionally pour part of the reserved bloom back into the cup to taste.
