    Switch CLOSED. Pour 120g at 81°C all at once and let it immerse.

    Break the crust and agitate ten times.

    Press the switch to release; let the bed drain completely.

    Add 90g of water straight into the drawn extract to 210g total.

Notes

Documented by Daisuke Fujisaki (Glitch Coffee) in his champion-recipe series; the individual champion is not named in the source. Grind coarse (Comandante ~26 clicks) and sieve with a Kruve to strip fines and chaff — this prevents powdery and papery off-flavours. Rinse a fast-draining Cafec Abaca filter so the bed doesn't clog on release. Pour all the water at once and immerse; the low temperature keeps extraction efficiency down and prevents over-extraction during the long steep. At 1:00 break the crust and agitate ten times to raise extraction efficiency quickly — safe here because the fines are already removed. Release the switch at 1:30; drawdown finishes near 2:00. Then add the bypass to the drawn extract to keep only the good early-extraction compounds and dial in strength.
