Documented by Daisuke Fujisaki of Glitch Coffee from an unnamed Torch Brewers Cup champion, this Switch method brews a cool, heavily agitated concentrate, then uses bypass to set strength while retaining clean flavor.

Before you brew

  1. 1 Sift out the fines and blow away the loose chaff.

    Close the switch. Pour 120g gently.

    Break the crust, then stir vigorously 10 times with a spoon. Let it steep.

    Add the final 90g as bypass water gradually, tasting as you go.

    Diluted and ready to drink.

Notes

Sieve coarse grounds to remove fines and chaff, and rinse a fast Cafec Abaca paper thoroughly. Break the crust before firm agitation, release onto a clear server, then add bypass gradually while tasting instead of diluting all at once.
