Notes

Use 90°C to moderate extraction, and keep the three pours smooth rather than turbulent. Let the fast-ribbed cone drain naturally; slowing it with a fine grind can emphasize bitterness. If the cup is flat, raise extraction with a slightly finer grind before adding agitation.
