    Pour

    Pre-pour 70g of 50°C water into carafe. Pour 100g of 84°C water into AeroPress, wetting all grounds.

    +100g 10s Slow
  2. 0:25
    Stir

    Stir in NSNS-WEWE pattern.

  3. 0:50
    Press

    Gently press for about 20 seconds into the bypass water.

  4. 1:10
    Done

    Brew complete. Serve.

Notes

Sifts ground coffee at 200µm to remove fines, also blows out chaff. Flow Control Filter Cap with 2x paper filters. 125ppm water made with Apax Lab prototype. Bypass: 70g of 50°C water pre-poured into carafe. Stir in NSNS-WEWE pattern at 0:25. Total brew ~1:10.
