Notes

Aim for body, not a light tea-like drink. If the cup reads thin and watery, drop the water temperature a touch and grind a hair finer for a thicker mouthfeel — that shift matters more here than chasing a longer contact time. The tight 65g/L ratio keeps it concentrated, and the pours are fast pulses — a quick addition, then a wait — for the whole brew to land around 2:30.
