    Pour 60g at 93°C and let it sit for 40 seconds.

    60g to 120g, poured once the bed has almost dried out.

Notes

Water around 75 ppm; grind medium. Four even pours, gated by drawdown: bloom and let it sit, then pour each next portion only when the bed has almost dried out. Letting the bed nearly dry between pours is what controls the flow rate and contact time — go by the bed, not the clock.
