How it brews

The slow-draining paper for Varia's 85 mm flat bed — the counterpart to the FAST sheet on the same seat, which makes the paper itself a real flow lever. Varia states the SLOW paper drains more slowly, which tends to lengthen contact time and build body, at some cost to top-note clarity; that slow class is the maker's own rating, not measured here. It's cut for the FLO 85 seat and doesn't interchange with standard V60 or Kalita papers. Reach for SLOW when you want the paper to add contact time rather than a coarser grind.
