How it brews

The fast-draining paper for Varia's 85 mm flat bed — one half of a genuine flow pair, since Varia sells the same seat a SLOW sheet too. Varia states the FAST paper drains more quickly, which tends to give a cleaner, brighter cup and lets you grind finer without choking the shallow flat bed; that fast class is the maker's own rating, not measured here. It's cut for the FLO 85 seat, so it doesn't interchange with standard V60 or Kalita papers. Pick FAST when you want the paper to step out of the way and let grind and pour set the pace.
