How it brews
The Chemex-only bonded paper is heavy — the maker states it's "20-30% thicker than most of the competition" — which mechanically restricts drainage and traps fines and fats, giving the Chemex its signature slow, clean, tea-like cup. That slow draw is community consensus rather than a printed flow number; Chemex itself only claims "proper infusion time." The white version is cleaned in an oxygen bath (no chlorine bleach). Fold it so the triple-layer side sits against the pouring spout, and rinse well before brewing — thick paper carries the most papery taste if you skip that. Squares, circles and half-moon are the same paper in different cuts.
