A Tokyo roaster's minimal two-pour method built for the NEO's fast flow. Grind a touch finer than a classic V60: the NEO drains before a fine bed can stall, so a single bloom and one fill is enough for a clean, sweet cup.

    Bloom

    Pour to 45g (about 20% of the water) to wet all the grounds, give a light spin, and let it bloom.

    Pour

    Pour the rest in circles up to 225g, then finish with a light spin to settle the bed.

    Done

    Let it finish dripping (around 2:00-2:30), then stir the brew and serve.

Notes

Grind finer than your usual V60 — the NEO has more ribs, extracts efficiently and resists over-extraction. Light spin = gently swirl the whole dripper and server in a circle so every ground wets evenly. Ratio is 1g/L-free: think 1:15 to 1:16. Darker roasts: coarsen one step and drop the temperature (medium around 90°C, medium-dark around 87°C).
