    Pour to 25g (15%), slowly rotate the dripper so water reaches the side walls too, and bloom for 40 seconds.

    Pour up to 165g in a thin stream, spiraling from the center to the edge and back, without raising the water level.

    Let it drain fully and serve.

Notes

Low ratio (1:11) and cool water suit dark roasts and keep bitterness down. Pour in a thin stream without agitating; spiral from the center out to the edge and back so the whole bed extracts evenly.
