    Pour 40g of hot water, then stir the slurry about 10 times.

    Pour up to 150g in one continuous pour, finishing by about 0:40.

    Let it drain onto the ice, stir as it chills, and serve over the ice.

Notes

Put about 80g of ice in the server before you start (up to 100g is fine). Grind around 19 clicks on a Comandante; go one click finer for more body, especially on lighter roasts. Pouring is done in about 40 seconds; it drains by roughly 1:30.
