    Bloom

    Pour 40g in circles from the inside out to wet all the grounds, then wait to 0:35 for the gas to escape.

    Pour

    With a heavy stream, pour in circles up to 144g (60% of the water), agitating the bed.

    Pour

    Let the level drop slightly, then pour gently in the center up to 240g, keeping the water steady.

    Done

    Let it finish dripping and serve.

Notes

Grind medium-fine, about like table salt — slightly finer than standard pour-over. Stage one agitates the bed for aroma; stage two is a gentle center pour for sweetness. Use 93°C for light roasts and 90°C for dark.
