Champion Hatakeyama Daiki's ultra-fast stir-only immersion on a NEO and Switch base: pour all the water first, add the grounds, stir twice, then open the valve. No pour technique at all.

    Pour

    With the valve CLOSED, pour all 150g of boiling water in, then add the grounds and stir counter-clockwise five times.

    Stir

    Stir counter-clockwise five times again, then wait.

    Wait

    OPEN the valve to drain.

  4. 1:15 04
    Done

    Stir the brew and serve.

Notes

Needs a Hario Switch base under the NEO, valve closed. An Abaca paper filter is recommended. Water goes in first, then the grounds — the opposite of a normal pour-over. Boiling water (100°C) and two gentle stirs do all the work.
