Most brewers taste a coffee once, decide what it is, and never go back. That's how you build a static palate. Retasting — going back to the same coffee twice or three times across a week — is how you actually learn it.
Why one cup isn't enough
Coffee changes with rest after roast. A bag tasted on day 4 isn't the bag you'll have on day 14. Light roasts often peak between days 10–21 off-roast; medium roasts shift earlier. If you taste once at day 5 and decide it's "thin and grassy," you may be tasting under-rest, not the coffee itself.
Your palate also drifts. The first taste of any coffee primes you for the second. What seems "intense citrus" cold is "balanced citrus" once you've sat with it. Two cups, an hour apart, often disagree about the same brew.
A simple retasting routine
- Brew the same coffee, same recipe, twice in a week. Day 1 and day 5–7. No recipe changes between them.
- Take notes both times. Three or four words is enough — body, acidity, sweetness, finish. Don't overthink it.
- Compare notes side by side after the second brew. What's the same? What's different? Did acidity drop, body climb, sweetness emerge?
- Decide whether to change the recipe, and what to change. One thing — grind, ratio, or temperature, never two at once.
That's the whole loop. Most learning happens at step 3, when you find your day-1 vocabulary doesn't match day-7's. That's your palate calibrating.
What to write down
Keep notes short and specific. Skip "great" or "smooth" — those don't help next time. Useful notes:
- Acidity (1–5): citric, malic, sharp, soft. Where on the tongue?
- Body (1–5): tea-like, syrupy, watery, oily.
- Finish (short / medium / long, dry / sweet / bitter).
- One descriptor: what does this remind you of? Even if it's "old library" — that's signal, not noise.
When retasting tells you to change something
If both tastings agree the cup is sour → grind finer or extend time. (Foundations covers the lever logic.)
If both agree it's bitter → coarsen or shorten. Or check water (dull bitterness is often water-driven).
If they disagree (day 1 sour, day 5 bitter) → the bag is shifting fast in storage. Try freezing portions or buying smaller bags. The recipe may be fine; the bean is the moving target.
